About a few months ago I bought a spiralizer and let's just say I've lowkey had zoodles EVERY DAY since then. I am a huge fan of how delicious and easy to make they are. I should really start trying out some different veggies to spiralize instead of always zucchinis but I just cannot get enough of them!
I found some rice paper wraps hiding in my pantry that I hadn't used in awhile so decided to stuff my zoodles and veggies into them to switch it up a bit. With a side of spinach, cauliflower and bell peppers this meal was on point. Try it yourself!
Sautee all of the above ingredients together on the stove until cooked. After cooked, separate the cauliflower and bell peppers and place in a bowl with spinach. Take the remaining ingredients and roll into your prepped rice paper wraps. To prep them, all I do is soak them in a pan of water for about 10 seconds one at a time so they get flexible enough to wrap. After it's soaked, I carefully place onto a towel to dry the access water, flipping it so you dry both sides. Then go ahead and place your veggies into the roll and get ready to wrap it up! If you're like me you'll probably end up trying to shove too much food into one roll and end up ripping it so just be careful. :)
